Any of the popular buffets will do. They will have about the same menu. For value and selection try Orleans, it is inexpensive and very good food.
OF course if you must stay on the strip, just stick with ones like Bellagio, Alladin, Wynn, etc at thrice the price.

In addition to the buffets, many of the hotel restaurants will also offer a Thanksgiving Special, turkey with all the fixin%26#39;s. There should be no shortage of places, and Vegas isn%26#39;t very crowded (for a long holiday weekend) at Thanksgiving.
